BBQ Pork Tacos

Hi friends!

I love this recipe and I really think you should too! It’s packed with flavour and it’s fun and customizable. We serve it when company comes over for dinner because we think it’s a little impressive. #ohyoufancyhuh

Please trust me on the BBQ sauce and ranch combination, it really takes these tacos to another level. I was hesitant at first too, but please just try it!

  • 1 pound pork tenderloin
  • dry rub (see below)
  • chopped lettuce
  • diced tomatoes
  • shredded cheddar cheese
  • BBQ sauce
  • ranch dressing
  • flour tortillas warmed
  • diced red onions (optional)
  • diced red peppers (optional)
  • chopped green onion (optional)
  • cilantro (optional)
  • avocado (optional)

 Dry Rub

  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • dash cayenne pepper
  • 1/2 teaspoon garlic powder

  1. Preheat oven to 375º and take out your stone (I use this one) or if you don’t have a stone, oil your baking dish.
  2. Prep your pork tenderloin by removing the silver skin with a sharp knife, the silver skin is the dense myofacial layer that surrounds groups of muscles and it won’t dissolve when your meat is cooked, so you need to trim it off. Then dry your meat (I’m serious).
  3. Combine all your rub ingredients or use Smoky Applewood Rub  or Smoky Barbecue Rub which is my husband’s shortcut when he makes this recipe!
  4. Generously apply the rub to all sides of the tenderloin and allow it to rest for 10 minutes. While it’s resting you can begin to prep your toppings.
  5. Bake for 30 minutes, or until your thermometer reads 145º.
  6. Remove from oven and cover fully with foil, then let it rest for 10 minutes before slicing very thinly on a diagonal.
  7. Take a warm tortilla and fill it with meat and all the toppings! Just don’t forget the BBQ sauce and ranch! It totally makes it!

Let me know how it goes folks!
